Looking back to 1842, Henry, the second-generation owner, signed his name to a liquor licence as “Henry of Pelham” instead of his real name Henry Smith. This impish prank gave way to a six-generation winery that made history as one of the first to bring Niagara wines to an international platform. Responsible and sustainable vineyard practises make for some tasty wine, and this Cuvee Catharine is no exception.

Named in memory of Henry’s wife, Catharine Smith, this wine is made from the traditional sparkling varieties of Pinot Noir and Chardonnay. Second fermentation done in the bottle and aged for 24 months on lees makes for a wine that, while based on old French techniques, manages to maintain its Niagara-ness. Tiny bubbles with strawberry, cherry and fresh-baked bread notes make for a tasty treat. -Red1
