Cellar Pardas was founded by two growers from Penedes, Spain. Roman Parera and Jordi Arnan acquired the near-abandoned 30-hectare estate of Can Comas, of forest, crop and local varietal vines and these days focus on a holistic approach as they manage the woods surrounding the vineyards and the land bordering them to create a whole undomesticated ecosystem and live in the property. Any new Pardas' plantings come from cuttings of old vines found in the region.

Xarel-lo is a Spanish grape variety native to Catalunya and typically used in Cava for its high acidity and light body. In this case, the grapes are grown at the Can Comas estate, 200-300 metres above sea level in the upper Penedes region. Having seen 12 hours of skin contact, the wine is orange in colour, floral and aromatic while retaining salinity and minerality. Aromas of orange zest, lemon and lilac, the palate has flavours of celery root, peach and orange pekoe. However, it is the distinctive white pepper on both that truly brings out a unique quality in the wine. 

Polar Boar is a collaboration between Jason (our friend/wine importer and founder of Cosecha Imports) and Celler Paradas. This is also in partnership with the Canadian fundraising movement "Hope for Hearts." 10% of Cosecha's net proceeds are donated to this foundation.
