Cave Springs Prova 2018
Dreaming of success is one thing, and plotting a path to it, is an entirely different matter. “Prova” means “Trial” in Italian, and for a winery that is so integrated into the fabric of Niagara’s winemaking community, this came as a surprise. This new label represents the exploration of understanding the limits of different winemaking techniques and to better understand their effect on winemaking styles at Cave Springs. In this case, the 2018 is a Dry Riesling made from the two blocks that are seen highlighted on the label. Made from the same grapes used in the flagship 2018 CSV Riesling, this wine explored the limits of oxidation- a sometimes scary word to wine lovers everywhere. 50% of the wine was fermented on skins, in an open top vat and aged on lees before blending it all back together. This risky move has paid-off, however, and is astoundingly interesting. Asides from the golden straw colour, and deep aromas of honeycomb, pine needles and apple sauce, there are also notes of fresh ginger, orange peel and jasmine tea. The complex finish has grippy notes of black tea and walnut.
This is an opportunity to rediscover Riesling and maybe create a new bond with it. Word to the wise, chill and then decant for 45 minutes. You won’t regret it.
