This type of wine has a beautiful copper colour which comes from leaving the skins in contact with the juice for 72 hours prior to pressing and starting fermentation. The technique results in a wine with added complexity, and a touch of tannins. It’s a wine style that dates back hundreds of years, but is now not very common. However, this is our favourite way of making Pinot Gris!

This 2020 version was made using grapes from the estate vineyard and the Devil’s Wishbone vineyard in Prince Edward County and has some exceptional characteristics. Its very appealing flavours and aromas of melon and apricot build slowly in the mouth along with a balanced acidity to reach a very long lasting mainly tannic finish, reminiscent of a high quality red wine! This wine leaves an impression of clean and pure excellence.
