UBE Miraflores is a white wine produced by the winery Cota 45 in Sanlúcar de Barrameda - a key town of the "sherry triangle". 

Cota 45 is the project of Ramiro Ibáñez, a prestigious oenologist from Jeréz who works as an adviser in different wineries of the Sherry Triangle (Marco de Jeréz). With Cota 45, Ramiro seeks to make manzanilla as they did in the olden days, without fortification and with shorter ageing, bringing all the focus on the terroir and the personality of each farm. With all the expression of the grapes marked by the soils, the climate and the vintage, and with the ageing only present to the necessary extent, to complement and boost the character of the terroir.

UBE Miraflores is a wine made from Palomino Fino from different plots of the farm Pago de Miraflores, Miraflores Alta and Miraflores Baja, with several types of albariza soils.

From 80-90 year-old Palamino vines in one of sherry's most famous pagos and sourced from a mix of three different Albariza soils, the Miraflores is the most delicate of the Cota 45 line-up with wispy, saline-inflected elegance. After fermenting in Sherry butts, it is aged for 8 months in selected butts with presence of the yeast cap (flor) in the last 2 months.

Bottled on the early side (usually less than a year after harvest), this cuvée is meant to be ready to drink upon release but don't hesitate to stash a few bottles away!
