In 1898, two British scientists discovered the “novelty” that is neon. Upon observing a brilliant red glow from sealed glass tubes that contained “rarefied” gas, one of them wrote “the blaze of crimson light from the tube told its own story and was a sight to dwell upon and never forget.” And if that isn’t one of the most powerful statements that outline the importance of the colour in a glass, I don’t know what is. The colour of the wine can tell us as much about a wine’s story as the aromas and flavours.

You may have been taught the generalised rule that the more “pink” a rosé wine is, the sweeter it is going to be - this could not be further from the truth. This bone dry, 100% estate grown wine is a  blend of Pinot Noir, Merlot, Malbec and Cabernet Franc, demonstrating the beauty of the “Saignée (“sohn-yay”) method”. From the French word meaning “to bleed”, this method of rosé winemaking involves “bleeding” off a portion of red wine juice after it’s been in contact with the skins and seeds. Considered to be a byproduct of red winemaking, its primary function has been to increase the concentration of red wines. So, if you’re not a fan of traditional rosé, you might like Saignée because these grapes were picked when optimally ripe fo red wine making. This makes for a bigger, darker and stronger rose. With tangy aromas of wild strawberry, raspberry, and subtle notes of licorice and lime zest on the palate this wine is perfect for when you want to make believe that you are a vampire walking along the Glitter Gulch.
