The Fox Croft block of the Wismer Vineyard is located on the corner of Victoria Avenue and Moyer Road in Vineland, within the Twenty Mile Bench sub-appellation of the Niagara Escarpment. The microclimate of the Fox Croft Block tends to be slightly warmer due to lower elevation on the Escarpment.
The Blanc de Blanc is made from 100% Chardonnay, and was made in the Traditional Method of making sparkling wine. It was aged for 36 months on less, which gives this wine a lovely yeasty characteristic. There was no sugar added during the dosage, so this wine is a true Brut sparkling wine.
