Stratus Field Blend Ancestral 2020
For a winery known for its use of a technique called Assemblage, a technique where each grape variety is harvested and fermented separately, "Field Blend" refers to the grapes being harvested and fermented together. The ancestral method is the oldest known method of making sparkling wine which involves bottling and sealing the wine before fermentation is completed, allowing for a lightly sparkling and fresh wine. The wine is unfiltered, and no sugar has been added.
In the case of the 2020 "Field Blend," Chardonnay, Riesling, Viognier and Sémillon were used, so we get some incredibly fresh but also savoury flavours. With aromas of crisp apple, magnolia, elderflower and asiago cheese, this wine is as delicious as it is interesting.
