Far from the trendy streets of Barcelona and the party-centric scene of Ibiza is the arid desert wasteland called Rueda. Here grows the near-extinct Verdejo (not to be confused with Verdelho from Portugal), an uncommon variety growing exclusively in Spain, saved by ex-doctor-turned-winemaker champion Victoria Ordonez. With a heavy focus on the research and development of native grapes and traditional techniques, she has been working tirelessly to showcase the best local grapes and ecological practices that Spain can offer.

This Verdejo is from thirty-year-old vines located in La Seca, Rueda and is chock-full of lime, grapefruit, apple, and fresh fennel flavours. Super fresh, lush and "green" for something originating from a desert.

Get this wine if you have an eco-conscientious plant-based diet. Pairs fabulously with anything slathered in pesto without a care if it's heavy on the garlic!
