Don’t let Champagne have all the glory! The Raventos Vineyards property dates back to 1497, and we are now looking at the 22nd generation of talent that makes all their wine from their estate-grown, organic plots. While technically in the Cava region of Spain, Conca del Rio Anoia is in and of itself distinct, having wines that have more salinity and acidity in the sparkling wines. This traditionally made cava is made with three local white varieties: Macabeau, Xarel-lo and Parellada.

The chalky minerality that drives the flavours of apple, lemon, honeysuckle and hazelnut is fabulous. Still, you should get this wine if you want a wine with energy, which will keep up with the flow of conversation. Consider pairing it with your next sushi night.
